The Springer Handbook of Odor is the definitive guide to all aspects related to the study of smell and their impact on human life. For the first time, this handbook aligns the senso-chemo-analytical characterization of everyday smells encountered by mankind, with the elucidation of perceptual, hedonic, behavioral and physiological responses of humans to such odors. From birth onwards we learn to interact with our environment using our sense of smell. Moreover, evolutionary processes have engendered a multi-faceted communication that is supported – even dominated – by olfaction. This compilation examines the responses of humans to odors at different stages of life, thereby building a foundation for a widely overseen area of research with broader ramifications for human life. The expert international authors and editor align aspects, concepts, methodologies and perspectives from a broad range of different disciplines related to the science of smell. These include chemistry, physiology, psychology, material sciences, technology but also disciplines related to linguistics, culture, art and design. This handbook, edited by an internationally renowned aroma scientist with the support of an outstanding team of over 60 authors, is an authoritative reference for researchers in the field of odors both in academia and in industry and is also a useful reference for newcomers to the area.

Modern Methods of Plant Analysis When the handbook Modern Methods of Plant Analysis was first introduced in 1954 the considerations were: 1. the dependence of scientific progress in biology on the improvement of existing and the introduction of new methods; 2. the difficulty in finding many new analytical methods in specialized journals which are normally not accessible to experimental plant biologists; 3. the fact that in the methods sections of papers the description of methods is frequently so compact, or even sometimes so incomplete that it is difficult to reproduce experiments. These considerations still stand today. The series was highly successful, seven volumes appearing between 1956 and 1964. Since there is still today a demand for the old series, the publisher has decided to resume publication of Modern Methods of Plant Analysis. It is hoped that the New Series will be just as acceptable to those working in plant sciences and related fields as the early volumes undoubtedly were. It is difficult to single out the major reasons for success of any publication, but we believe that the methods published in the first series were up-to-date at the time and presented in a way that made description, as applied to plant material, complete in itself with little need to consult other publications. Contributing authors have attempted to follow these guidelines in this New Series of volumes.

This volume is commodity-oriented, as will be future volumes. Dealing with the flavour of beverages, it covers the important beverage groups (coffee, tea, cider, beer, wines, vermouth and fortified wines, distilled beverages, non-alcoholic fruit beverages). The chapters are written by internationally recognised authorities from the USSR, USA, Italy, Switzerland, the Netherlands, and the UK. Each chapter reflects the general approach and differing emphasis on the various aspects of flavour relevant to the beverage under discussion. The authors have covered the most up-to-date developments in their respective fields, and in some cases, have reviewed the literature up to October 1985. The important older literature has not been ignored and in areas where the more traditional aspects of flavour study and development are still relevant, e.g. tea and coffee, these are included. The book will interest all research workers concerned with flavour technology. Those studying any of the beverages covered will appreciate the up-to-date review of their subject and also the consideration, in the same volume, of other beverages.

Alcohol consumption in all European countries is one of the leading causes for productivity loss, premature death, and accidents and is a hazard to health. Therefore, in order to monitor alcohol consumption in clinical as well as in forensic practice, occupational medicine, at court and for traffic safety and safety at workplaces, biological state markers of high sensitivity and specificity, capable of monitoring those in treatment for alcohol dependence or poly-drug-abusers as well as social drinkers in risky situations (driving, workplaces) are required. The markers known today can not be considered satisfying with regard to these parameters. Therefore the aim of this book is to contribute to improving the above mentioned issues by promoting knowledge on new, by far more accurate, and both disease and time independent alcohol intake markers.
