Abstract: This publication includes several creditable quick bread recipes. These quick bread recipes have been modified to comply with the CCFP standards as creditable bread alternates. CCFP standards require enriched flour to be the primary ingredient by weight -- enriched all-purpose and/or whole-grain flour must be used.
